Dukan Diet Dessert Recipes
For many people, the craving for sweets gets in the way of the best laid diet plans so Dukan Diet Dessert recipes are an absolute must. You will probably find that the first few days of sugar cravings are the most challenging and the hardest to fight. When you are used to having sugar (and sugar is in a lot of what we eat – not just sweets, cakes, candies and biscuits) – the physical cravings for it can be intense when you restrict it from your diet.
Dr. Dukan comes to the rescue with some great recipes for every stage of the Dukan Diet to allow you that sweet fix but without getting off your diet track. Dr. Dukan recommends using aspartame or nutrasweet as well as sucralose or splenda as alternatives to sugar artificial sweeteners. If you are okay with those artificial sweeteners, follow Dr. Dukan’s recipes exactly as they are low in calories and have the sweet taste you want to satisfy your cravings. However, we don’t think aspartame is good for you so we’d recommend stevia or other sugar substitutes instead of aspartame. You must avoid fructose, a fruit sugar based product as it is not allowed in the diet. If you get a good stevia and use it properly, you shouldn’t have the aftertaste that people sometimes complain of with stevia.
The first Dukan Diet sweets recipe that is high on protein and great to curb those sweets cravings is the Cafe Chocolate, Coffee or Vanilla Creme. This is an easy, basic recipe that you need very few ingredients for. Make it to taste and enjoy the delicious Dukan approved sweet treat in every phase of the diet.
Cafe, Chocolate or Vanilla Creme
serves 4
3 eggs, separated
¼ tsp cornstarch
1 c skim milk
Flavoring (choose one): 1tsp instant coffee, 1 tsp non-fat cocoa powder dissolved in water or 1 vanilla pod, split lengthwise, insides removed and mixed with a few drops of vanilla extract. Sweetener to taste. Dukan uses aspartame (nutrasweet). You can also use Splenda. We recommend Stevia because it is a natural sweetener with no calories that has no negative long term side effects.
Now – how to incorporate the ingredients: First, make the ‘creme anglaise’: In a bowl, mix the egg yolks with the cornflour and beat until you have a smooth mouse. Pour the milk into a sauce pan and add the flavoring of your choice – either coffee, cocoa or vanilla. Warm over low heat. Remove from heat. Add the warmed milk mixture to the egg yolks. Put back on a low heat and stir well until the mixture thickens. Turn off the heat as soon as the mixture sticks to the spatula. You can now add sweetener like aspartame or stevia to taste. Pour into a large souffle dish or individual ramekins. Allow to set in the refrigerator. Serve very cold. You could also put this in an ice cream maker following the instructions that come with your ice cream maker.

Dukan Bavarian Mousse with Strawberry Jelly
Prep time: 15 min Rest time: 3 hours
Serves 1
Phase: PP (Attack phase approved!)
Ingredients
2 egg whites
1 sheet of gelatin
2 Tbsp 3% Bridelight cream (tolerated item – limited amount each day) This doesn’t appear to be readily available in the US – you will likely need to find a replacement cream that is 2-3% fat and remember as a tolerated item, you cannot have unlimited amounts each day! (We’ve not tried it yet but read a possible alternative could be low fat sour cream with a bit of sweetener and a couple of drops of fat free milk.)
4 ½ Tbsp powdered sweetener (stevia, aspartame, splenda, etc)
1 tsp Strawberry Flavoring
(no sugar)
3 drops red food coloring (this of course is optional and we would recommend avoiding it as it is an artificial color)
1 pinch salt
6 level Tbsp of fat free fromage frais – if you have a difficult time obtaining fromage frais in your area, you could try mixing fat free cream cheese with no fat smooth cottage cheese or use fat free mascarpone or even a fat free yogurt and fat free smooth cottage cheese combination. However, if you can find fromage frais – go with that!!
Use a Chinese strainer lined with kitchen towel to drain off 6 table spoons of fat-free fromage frais overnight.
The following day, add 2 table spoons of 3% fat Bridelight cream and 2 tablespoons of
sweetener and mix. Whip 2 egg whites with a pinch of salt until very stiff. Work them into the fromage frais and hang in gauze, leaving it to drain in a cool place for 3 hours. During this time,
prepare the jelly:
put a sheet of gelatine, 1 teaspoon of strawberry flavoring, 3 drops of red food coloring and 2 ½ tablespoons of sweetener into 80cl of warm water. Make sure that the gelatine has melted fully and put in a cool place until you are ready to make up the plates. To do this, place the gauze and its contents into a heart-shaped mould and press it in a little so that it takes shape. Take out of the mould onto a plate and remove the gauze. Mash up the jelly with a fork and arrange it around the bavarois (or your little cream cake).

Dukan Dessert Recipe #2
Spanish Style Epiphany Cake
Prep time: 45 mins Cook time: 30 mins
Phase: PP Attack Pure Proteins
Serves 4
40g powdered sugar substitute (splenda, stevia, aspartame etc)
150g skim milk
Powdered Yeast
100g fat-free fromage frais or cream cheese
1 Tbsp melted Butter Flavoring (this is NOT butter – it is a butter flavoring that you can purchase on the Dukan Diet shop website or a comparable butter flavoring.
2 eggs
1 tsp salt
2 Tbsp orange blossom water
8 Tbsp wheat bran
4 Tbsp Oat Bran
1 Tbsp Protein Powder
(optional)
Zest of 1 orange and 1 lemon
Gently heat the milk. Add the fromage frais, butter flavoring, yeast, orange blossom water, eggs and salt. Whisk thoroughly. Then add the brans and powdered protein (optional). Heat the oven to 200°C.
Pour the mixture into a mould in the shape of a crown. Dust with aspartame or stevia powder and cook for 20 minutes. At the end of cooking time, remove the cake, decorate with the zest and put back in the oven for a further 10 minutes.

Dukan Dessert #3
Strawberry and Lemon Mousse
Prep time: 10 mins Cook time: 0 min Refrigeration time: 10 mins
Phase: Attack phase approved PP Pure Protein
Serves 2
4 Petits-suisse
12 drops Strawberry Flavoring
4 Tbsp 0% fat Normandy Fromage Frais (or fat free cream cheese)
1 egg
20 drops lemon meringue pie flavoring (the Dukan Diet UK webshop has this flavoring for purchase and they ship worldwide)
2 Tbsp powdered sweetener
6 drops red food coloring
Whip the egg white until stiff and fold in the fromage frais, lemon meringue pie sweetener and 1 Tbsp powdered sweetener.
In a separate bowl, mix the petits suisses with the strawberry flavoring and 1 Tbsp powdered sweetener.
Divid the mixture into two serving dishes – finishing with the mousse.
Leave to cool in the refrigerator before eating.

Dukan Dessert Recipe #4
Pistachio Egg Custard
Prep time: 5 mins Cook time: 30 mins Refrigeration time: 2 hours
Phase: Attack PP Pure Protein (approved for all phases)
Serves 8
4 1/4 cups skim milk
6 eggs
2 Tbsp Pistachio Flavor
4 Tbsp liquid sweetener (stevia, splenda, aspartame etc)
1 White Cardamom pod full of seeds
5 drops of blue food coloring (optional)
2 drops of yellow food coloring (optional)
Remove the oven rack and preheat to gas mark 5 or 375 degrees F.
Boil the milk with the cardamom seeds (open the pod and remove the seeds) in a saucepan. Leave to infuse for 15 minutes.
In a bowl, break the eggs and whisk them.
Add the pistachio flavoring and sweetener and mix.
Add the hot milk, whisking the mixture continuously.
Finish with the drops of food coloring, mixing well.
Arrange the ramekins on the rack and pour in the mixture.
Bake in pre-heated oven for 30 minutes.
Leave to cool at room temperature, then place in the refrigerator for 2
hours.

What things do you must crave when dieting? Alcohol? Check! Butter? Check! Sweet Vanilla sugar? Check! This decadent dessert combines the flavors you crave – rum, vanilla, and butter but in a way that is approved and even enhanced with protein. Let us know if you find any variations that make it even more delicious. Make sure to wait until the cruise phase for this one – it is not an attack phase approved dessert.
Mega Protein Vanilla Butter Rum Crepe Pancakes
Prep 10 mins Cook time: 5 mins
Makes 10 – max you can have during cruise phase is 2 pancakes per day!
Phase: Cruise
200 g silken tofu
100 g cornflour (tolerated item) (cornstarch in the US)
10 Tbsp Protifar Protein Powder
20 drops Melted Butter Flavoring
30 drops White Rum Flavoring
1 tsp Bourbon Vanilla Flavoring
2 Tbsp powdered sweetener (or more to taste)
4 eggs
½ litre skim milk
In a large bowl, combine the tofu, cornflour (or cornstarch), protein powder and eggs – mix well.
Add flavorings and mix again.
Slowly stir in the milk to get a smooth consistency.
Heat a non-stick pan and ladle the batter onto the pan. Brown one side and flip to the other side.
