Unlike many diets out there today, this one is comprehensive in its approach taking you from the fast weight loss portion to a maintenance phase to a lifetime modification you can live with. An attack phase, where you eat all lean protein, a cruise phase adding in vegetables, a consolidation phase where you gradually add fruit and breads in specified amounts and the stabilization phase where you can eat everything six days a week and then on the seventh day, you go back to the all-protein “attack” diet for a day. Then, you go back to normal.
Pierre Dukan’s research and patients’ results have shown this to be an effective long-term strategy if followed as instructed. If you like structure want to commit to an effective diet plan, check out the Dukan Diet in more detail here.
To get a sampling of a few of the recipes Pierre Dukan developed for the diet, a few recipes are listed below although you can create your own recipes. Pierre Dukan is very specific about what foods you can have and which you cannot have during each phase of the diet. This makes it easy to avoid mistakes as everything is laid out for you.

Recipes for the Protein-Only days
Shrimps Sauteed in Herbs – serves 2
2lb shrimps, peeled, de-veined and rinsed
4 garlic cloves, crushed
1oz fresh parsley, chopped
2fl oz dry white wine
1 lemon, cut in half
In a non-stick frying pan on medium heat, add the shrimps, garlic, parsley and wine. Sauté until the shrimps are pink. Serve with fresh lemon.
In later phases of the diet, you may incorporate vegetables into this preparation but during your attack phase, follow the recipe exactly.
Your most dramatic weight loss results are seen during the attack phase of the diet.
Tandoori Chicken Escalopes – serves 6
6 chicken breast fillets
2 small containers of non-fat yogurt
2 tbsp Tandoori masala spice mix
3 garlic cloves, crushed
2 cm piece ginger, crushed
2 green chilies, crushed
Lemon juice
Salt and black pepper
Mix all the ingredients together, except the meat. Make sure the garlic, ginger, chilies and spices are completely crushed to make a smooth blend. Score the chicken so that the yogurt and spice mixture gets inside the meat and marinate overnight in the fridge. The following day cook bake at 400 degrees for 20 minutes then brown under the grill or broiler before serving.
Both of the above are great options for the first phase, the “attack phase” and on your alternating protein-only days in your stabilization period. You can enjoy them anytime though!
The following are allowed during the second or cruise phase of the Dukan Diet – if you remove the vegetables, you can enjoy them during the attack phase of the diet. During the cruise phase, you continue to lose weight but at a slower more gradual pace.
Beef Kebabs – serves 4
14oz Beef fillet, cut into large chunks
¼ c low-sodium soy sauce
2 tbsp Dijon mustard
1 Tbsp cider vinegar
A little thyme and 1 bay leaf
Dash of vegetable oil
¼ c fresh lemon juice.
Mix all the ingredients together and marinate the beef for 2 to 4 hours in the refrigerator. Discard the marinade.
Place the chunks of beef on the skewers (if using wooden skewers, make sure you soak them in water first to prevent burning). Grill until cooked to your liking. Remember – you can only have greens or veggies in the second, third or fourth phases – no greens during attack!
During the second phase or cruise phase you can add tomatoes, mushrooms, peppers and onions.
Cafe, Chocolate or Vanilla Creme – serves 4
3 eggs, separated
¼ tsp cornstarch
1 c skim milk
Flavoring (choose one): 1tsp instant coffee, 1 tsp non-fat cocoa powder dissolved in water or 1 vanilla pod, split lengthwise, insides removed and mixed with a few drops of vanilla extract.
Sweetener to taste. Dukan uses aspartame (nutrasweet). You can also use Splenda. We recommend Stevia because it is a natural sweetener with no calories that has no negative long term side effects.
Now – how to incorporate the ingredients: First, make the ‘creme anglaise’: In a bowl, mix the egg yolks with the cornflour and beat until you have a smooth mouse. Pour the milk into a sauce pan and add the flavoring of your choice – either coffee, cocoa or vanilla. Warm over low heat. Remove from heat. Add the warmed milk mixture to the egg yolks. Put back on a low heat and stir well until the mixture thickens. Turn off the heat as soon as the mixture sticks to the spatula. You can now add sweetener like aspartame or stevia to taste. Pour into a large souffle dish or individual ramekins. Allow to set in the refrigerator. Serve very cold. You could also put this in an ice cream maker following the instructions that come with your ice cream maker.

Protein and Vegetable Recipes
Enjoy these recipes in the cruise, consolidation or stabilization phases
Stuffed Mushrooms – Serves 20 hors d’oeuvres
20 large mushrooms, washed
2 garlic cloves, chopped
1oz fresh parsley, chopped
A few tsp of skim milk
A few drops of vegetable oil
Salt and black pepper
Pre-heat oven to 400 degrees
Use the largest mushrooms you can find. Wash and remove the stalks. Chop stalks and add garlic, parsley, salt, pepper and skim milk. Cook the stuffing mixture in a non-stick frying pan.
Meanwhile, bake the mushroom caps stem side down for 10 minutes.
Fill the hollow mushroom caps with the cooked stuffing and bake in the oven for about 20 minutes or until done.
When cooked, drizzle a drop or two of vegetable oil over each stuffed mushroom.
Three-pepper Tuna – Serves 2
1lb 9oz tuna steak
1 red pepper
1 green pepper
1 yellow pepper
Juice of 1-2 lemons
2 garlic cloves, crushed
Salt, white pepper
Wash, de-seed and halve peppers. Grill for 5 minutes, then to make peeling them easier place in a plastic bag for 10 minutes.
Next cut into strips and gently fry for a few minutes over a moderate heat in a non-stick frying pan that has been lightly oiled (add some oil then wipe with kitchen towel) with a little water in the bottom. Season the tuna and steam for 20 minutes.
Mix together lemon juice, garlic and peppers. When the tuna is cooked, allow to cool then marinate it with the peppers in a cool place for 2-3 hours. Serve cold.
Floating Island – Serves 4
4 eggs, separated
2 ¼ c skim milk
1 vanilla pod, split lengthwise.
Sweetener to taste
In a mixing bowl, beat the egg whites until they form soft but firm peaks (you can use a dash of cream of tartar to make this easier). In a saucepan bring the milk, sweetener and a small vanilla pod to a boil.
With a ladle carefully spoon out snowball-sized portions of the egg whites and drop them into the hot milk. They will swell up. After turning them over remove with a slotted spoon and drain on a plate.
Those are just a few recipe ideas. Be creative in planning your meals and recipes to your tastes. Pierre Dukan gives a list of condiments and foods you may eat in each phase of the Dukan Diet and which foods to avoid. If you stick the list, you will be fine.
Also from his book, this excerpt gives and idea of an average day during the second phase or “cruise” phase of the diet. During this phase, you lose weight at a more gradual pace.
A Typical Protein and Vegetable Day
Breakfast:
Coffee or tea (with skim milk and sweetener)
Either 2 small non-fat yogurts or
1 c non-fat cottage cheese and
Either 1 slice turkey, chicken or low-fat ham, or 1 boiled egg
Snack: 1 small non-fat yogurt or
½ c non-fat cottage cheese
Lunch:
Stuffed mushrooms and
Three-pepper tuna and
Café creme
Snack: Oat bran pancake (made with 2 tablespoons oat bran) and
Slice of ham or smoked salmon
Dinner:
Thick zucchini soup and
Beef kebab and
Finish with a treat of Floating Island

Yes you can drink tea – it’s a great way to add more water to your day. Just make sure you don’t add sugar! No calorie sweeteners like stevia are okay.
I have lost 15 pounds during the first month. The diet is easy and very satisfying. I have to say that I really enjoy the nonfat greek yogurt! And I make oat bran muffins that are very yummy. And no carb cravings, even in a restaurant!
I found the loss in the first 3 days must have been mostly fluid ‘cos loss stopped after that.

Hi Fay – Thanks for visiting! How long did you continue the Dukan Diet? Were you drinking the required amount of water and fluids? Walking 25 mins a day, taking the oat bran and avoiding salt? Keep going and good luck!!
Oat Bran Muffins
Preheat oven to 350. Use a butter flavored spray to lightly coat the muffin tin & wipe out the excess with a paper towel. This recipe fills a mini-muffin pan that makes 24.
Mix:
2 teaspoons baking powder
1 1/2 – 2 teaspoons ground cinnamon
8 Tbsp oat bran
4 Tbsp Splenda (or equivalent of any other sweetener that is heat stable-aspartame is not)
Mix dry ingredients well & then add:
2 large eggs
8 Tbsp fat free greek yogurt
Pour evenly into the muffin tins and bake for 11-12 minutes. Don’t overcook or they will be dry. The tops don’t get golden brown but the bottoms will.
This is enough for 4 days on cruise phase (6 mini muffins are a serving). I keep them by serving in the refrigerator in a ziploc baggie and warm them for about 10 seconds in the microwave before I eat them. My favorite way to enjoy these is with a bowl of yogurt that I add cinnamon to along with sweetener.
If you are on attack phase, adjust the oat bran down to 6 Tbsp and the yogurt to 6 Tbsp. The consistency should be about the same and you will still have a 4 day supply.

Yes, you can add any spice you want to for the muffins. I have added pumpkin pie spice, and also used a bit of allspice along with the cinnamon. I’m sure nutmeg would be delicious too!
What about oatmeal?Can I have it with fat free milk and splenda?
No regular oatmeal during the first two phases of the diet as the grain used for rolled oats is rich in simple sugars. Oat Bran is the outer part – a fibrous husk that protects the oat grain so it has less sugar, more protein and fibers and lots of health benefits.
You can have fat free milk and splenda with the allowed amount of oat bran for whichever phase of the diet you are in. You can make oat bran muffins (see the recipe below!) or the oat bran galettes which you can add splenda to if you like them sweeter.

Hey, Can u still lose weight if you have hypo-thryoid. Asking since I am on medication for my thryoid condition and I started Dukan but not seeing fast results abit depressing. feel better though
i was wondering which are the best yoghurts to eat> ive been eating the muller light youghurts with 0.1% fat so its easier to eat at lunch time and for snacks. is this right or is there something better i can eat that comes in snack size pots?

The Cafe Creme, Chocolate Creme and Vanilla Creme are really easy. 3 eggs, 1/8 tsp cornflour, 8 oz (226 ml) skim milk. Then choose either 1 tsp instant coffee, 1 tsp non-fat cocoa powder dissolved in water or 1 vanilla pod split, split with insides removed with a few drops of vanilla extract plus sweetener to taste. Dr. Dukan recommends aspartame. We recommend stevia as it is natural instead of an artificial. I would like to know if Ricotta is ok in the first phase At the moment i live in Jakarta and quark and cottage cheese is unavailable

Can you eat to much oat bran. I am just starting the cruise phase and am loving oat bran, if I go a bit over the 2tbl will I ruin my results?
I know you are not allowed potato but what about kumara or sweet potato?

Thanks for stopping by. Unfortunately, sweet potatoes are too starchy for the first two phases of the Dukan Diet. Kumara is similar to a sweet potato, yes? If so, they are too starchy for the first two phases of the diet. Good luck with your slimming!
Hi Sue, Sorry we somehow missed your comment and are so delayed in responding. You should try to avoid going over the 2 Tbsp per day of oat bran. If you are having severe cravings, Dr. Dukan says it is okay for a very short period (up to a day or two) to have more oat bran – up to three galettes or equivalent per day but limiting that is better and will improve your Dukan Diet Results. Could we use protein powder in any recipes? I hope I might be able to use it to make the pancakes and as we’re on a high protein diet it might mean we could have more pancakes?? thanks. I’ve lost 2.3kg’s in 5 days on the attack phase ;-D

Dr. Dukan generally seems against protein powders and instead encourages loading up on lean protein from real whole foods but your question is a good one that we don’t have an answer to. Dr. Dukan answers questions in a weekly chat at the UK Dukan Diet support site Dukan Diet Support Home and you may want to ask the question there. If you get an answer please come back and let us know. It is important to have the required Oat Bran serving each day however so whether you use it in the Dukan pancakes or get it some other way – make sure to have the daily oat bran for best diet results!
Thanks Dominique. I’m not ‘subscribed’ to Dukan Coaching so I’m not allowed to ask questions unfortunately. My idea re pancakes is that as I found a recipe using skimmed milk powder, I’m thinking that using the Oatbran AND protein powder will make more pancakes?! I would still use oatbran but add extra protein, using protein powder, & have extra pancakes too..does that make sense?!! p.s. weighed again and have lost 3kg’s in 6 days!!

hi there, im on the fourth day of the attack phase and doing well, ive been using onken 0 fat free yogurt which is lovely, but even more delicious is onken fat free strawberry is this ok as i think there are tiny bits of fruit in it, its 7.9 carbs per 100grammes, should i stop using this?
Hi Claire – Congrats on your success on the diet so far! Unfortunately, Dr. Dukan generally recommends that you avoid the yogurts with the fruit in them during the first two phases of the diet so that you don’t affect your results negatively. Keep up the good work!
is wine allowed at any stage of the diet?
I have lost 10kg on dukan diet and have maintained it for 7months. My husband is now on it for 1 week and is in second phase of diet has lost 2kg so far but he really craves snacks so the oat bran muffins sound really good for him to have mid morning and afternoon. He likes to have something with cup of tea. He is having oatbran for breakfast though as a porridge. Any suggestions?
Hi Chloe – No wine is allowed in the first two phases of the diet. During the third phase, the Consolidation – you can have a glass of wine with your celebration meal – that’s ONE glass. 🙂 Further into your consolidation period – you are allowed two celebration meals per week so you would have the option of a second glass of wine then. Jennifer- Congratulations on your success with Dukan! Great results and impressive that you have maintained for 7 mos. One idea for the oat bran and breakfast situation would be to try changing the breakfast option to something else so he can enjoy the oat bran muffins later in the day when the cravings are strong. Perhaps instead of the porridge for breakfast, doing one of the egg based recipes – even one that is categorized as dessert like the Flan, or the Cafe Vanilla, Mocha or Chocolate Creme so there is the sensation of a creamy delicious but high protein start to the day. Or a quiche or a frittata to start the day and then oat bran pancakes later with the tea? Hope that helps. Would love ideas from anyone else who has advice on what has worked for them!

Hi Tom – honey is not approved for the first two phases of the diet. For sweeteners, Dr. Dukan offers the options of aspartame, splenda or sucralose and stevia. Good luck with your diet.

Is bacon a no go in the attack phase? and the book says you can have pickled onions in this stage but not too many how many is too many.
Have been in the attack phase for 3 days and have lost 3 pound!!!
Hi Melissa, congrats on your weight loss so far – that’s terrific! Bacon is out during the first two phases. Only very very lean cuts of pork or lean ham with no rind work in the first two phases. Regarding the pickles – we haven’t seen Dr. Dukan give an exact amount on this except to say that you should only eat them as a condiment which would indicate a small amount. For reference – he says during the attack phase that you can use onion as an “herb” or condiment as well and indicates that about 1/2 onion for the full day would be the max. I would stick to the equivalent of that for your pickled onions/gherkin amounts. And as always, the less you can have of the ‘tolerated’ or non lean protein foods, the better it is for your results. Hope that is helpful. If any readers have more specific advice on the pickles – please contribute! Wishing you continued success with your diet!!!

Hi Jo,
you can substitute Fromage Frais or non-fat Philadelphia cream cheese for Quark if you can’t get it in your area but the cream cheese is a tolerated item so you can’t have unlimited amounts. Dr. Dukan says that a blend of low fat cottage cheese with low fat yogurt is a good substitute for Quark. You may want to talk to the dairy buyer at your local health food store or grocery store to see if they can start stocking quark – I’m sure your fellow Dukan Dieters would love that too!
Congrats to all of us who have adapted the Dukan way of eating! I have found it extremely effective after having ‘let myself go’ somewhat. In 8 weeks I have lost 22lbs leaving a further 18lbs to lose to reach my target weight. My Mum has also reached her goal thanks to Dr Dukan by losing 18lbs in the same timeframe. My Auntie has now started and lost 8lbs already during the initial attack phase. Safe to say we are converts!!! Thank you, Dr… And keep at it everyone – just be patient and have faith – like always, we will have those odd ‘sticky’ weeks… But the others make up for it.

Sarah is my Auntie and I have to say that with my Mum and Auntie following the Dukan diet also, we are proving strength in numbers, weighing in weekly and shRing our news is great support for each other. We are all lucky to have hubbys who give us great support too… It all helps! To date, I have not created any recipes of my own. I found that the local Co-op sells cartons of egg whites which I could find nowhere. My local Health store sells amazing teas (sweet chilli tea, liquorice and cinnamon & three fennel being my faves). I drink at least 1.5 litres water a day and loooooove fish so I’m on a winner really. Any new tips I’ll be sure to share – we must continue to support one another. It’s key for me!
